🍚 Weeknight Rice Bowls + Meal Prep Favorites

Lately, I've been craving meals that feel nourishing, flavorful, and realistic to actually stick with during the week.

Instead of planning something different every single night, we've been focusing on having a few dependable meals ready to go. Rice bowls are a go-to in our house for this!
​
Simple ingredients, lots of flexibility, and enough variety to keep things interesting without the extra effort.
​
They're easy to prep ahead, easy to customize, and work just as well for lunch as they do for dinner.

​Here are a few of our favorite bowl-style meals and meal prep ideas we love:​

Rice Bowls

  • ​Shrimp Poke Bowls – Fresh, simple, and great for quick assembly when you already have rice cooked.

  • ​Southwest Chicken Bowls – One of my go-to meal prep dinners. Spiced chicken, rice, beans, and veggies that hold up well all week.

  • ​Miso Butter Salmon – This baked salmon feels a little fancy but is surprisingly easy. I love serving it over rice with whatever veggies I have on hand, such as bok choy and sauteed mushrooms.
