Last weekend we watched the Super Bowl with our friends, and one thing everyone really loved were my Chopped Italian Subs!

Someone said it gave Jersey Mikes vibes, which, for me, is a compliment because I LOVE Jersey Mikes. 😍
​
Except this time, I served them on sweet Hawaiian slider buns instead of regular sub rolls. It made them feel way more game-day friendly!
​
I like to switch it up, but that day used ham, salami, pepperoni, provolone, mozzarella, lettuce, tomato, onion, and pickles, and that creamy deli sauce is just so good every single time. It was a great combo.
​

Which means warm, comforting dinners are very much still happening around here. So today I’m sharing a new cozy recipe instead!
​

​Instant Pot Mississippi Pot Roast​

This Instant Pot Mississippi pot roast is part 4 of my Comfort Food Made Healthier series (see the other recipes below).
​
The recipe uses simple ingredients and keeps all the savory, tangy flavors you'd expect from a Mississippi pot roast, just with a few tweaks to make it my own.
​
I use grass-fed beef when possible, add celery, carrots, and onion for extra nutrition and flavor, and make a homemade ranch seasoning instead of using a packet. It’s an easy way to control the sodium using pantry seasonings you probably already have!
​
The peperonici peppers are what make it. They're not spicy, more mild, and give the recipe its signature tang.
​
We love peperoncinis around here so much that we even grew some of our own last year (see below), and also started more seeds for this year. I'm excited!!
​
Anyway, Mississippi pot roast is the kind of comfort food dinner you'll actually want to make, and the Instant Pot keeps it simple for busy weeknights and meal prep.
